Crab Boil with Seasoned Butter Sauce

This Crab Boil combines seafood, smoked sausage, potatoes, and corn cooked in a seasoned broth infused with aromatics and spices. Dungeness crab sections and shrimp finish the boil briefly to preserve tenderness. The dish is served with a warm lemon-garlic Old Bay seasoned butter sauce for brushing and dipping, offering a rich, savory complement to the boiled ingredients.

Description

The recipe starts by boiling water and chicken broth with wedges of onion, whole peeled garlic cloves, sugar, Old Bay seafood seasoning, paprika, salt, and halved lemons to build a flavorful base. After simmering, small red and yellow potatoes, sliced smoked sausage, and halved corn cobs are cooked until nearly tender.

Dungeness crab sections and peeled shrimp are then added briefly to the pot, cooking until the seafood is just done. This layering approach helps each ingredient maintain proper texture. The solids are drained and arranged on a serving vessel after discarding the aromatics.

A seasoned butter sauce is prepared by melting butter and whisking in lemon juice, crushed garlic, Old Bay seasoning, and optional hot sauce. The butter sauce is brushed over the crab boil spread before serving alongside lemon wedges and fresh parsley garnish. This enhances the seafood and vegetables with a tangy, garlicky richness.

Ingredients

Servings
  • 2 gallons water
  • 2 quarts chicken broth
  • 1 onion cut in wedges, large
  • 8 garlic whole and peeled, cloves
  • ½ cup sugar
  • ¼ cup Old Bay seasoning
  • 1 tablespoon paprika
  • 1 tablespoon salt
  • 2 lemon halved (plus more for garnish if desired, plural
  • 4 pounds potato red and yellow, small
  • 24 ounces smoked sausage
  • 6 corn halved, cobs
  • 1 pound Shrimp raw, peeled, with tail on
  • 4 Dungeness crab cooked, sections

Seasoned Butter

  • 1 cup butter (2 sticks)
  • 1 lemon juiced
  • 4 garlic crushed, cloves
  • 1 teaspoon Old Bay seafood seasoning
  • hot sauce (optional, a few dashes or to taste)
  • parsley for garnish

Instructions

  1. Bring the water, chicken broth, onion, garlic, sugar, Old Bay, paprika, salt, and lemons to a boil. Boil for 10 minutes.
  2. Add potatoes, cut sausage and corn to the stock pot and boil for 15-20 minutes. Check at 15 minutes to make sure potatoes aren't getting too soft. You don't want them to be quite fork tender yet. Prepare the seasoned butter (below) during this boil.
  3. Add crab and shrimp to the stock pot and boil for 7 minutes.
  4. Remove and drain well. Remove onions, lemon, and garlic cloves and spread the remaining ingredients over a baking sheet or very large platter. Brush with seasoned butter (below) before serving and garnish with fresh lemons.

Seasoned Butter

  1. Melt butter in a small saucepan on low. When butter is melted, whisk in remaining ingredients and keep on warm until ready to serve. Brush onto the crab boil and pour remaining in bowls for dipping.
