Cranberry Coconut Macaroons Recipe

Cranberry Coconut Macaroons are chewy coconut cookies studded with dried cranberries and lightly sweetened with honey or maple syrup. Finished with a drizzle of dark chocolate, they offer a balance of tart, sweet, and rich flavors in a handheld treat.

Description

This Cranberry Coconut Macaroons Recipe uses shredded unsweetened coconut, dried cranberries, coconut oil, and honey or maple syrup blended in a food processor until sticky. The mixture is portioned into cookie shapes and baked until set but still tender inside. After baking and cooling, they are drizzled with melted dark chocolate for added richness.

The texture of these macaroons is chewy and moist, with bursts of tartness from cranberries contrasting the natural sweetness of coconut and honey or maple syrup. Coconut oil adds subtle richness and helps hold the cookies together.

These macaroons are great as a snack or dessert and can be served alongside coffee or tea. The dark chocolate drizzle adds a touch of elegance and bittersweet flavor.

Replace honey with maple syrup if needed, though maple syrup makes the macaroons a bit more delicate and less firm.
