Ingredients
- 1 ½ cups of flour
- ¼ tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- 6 tbsp unsalted butter softened
- 4 oz cream cheese softened
- ½ cup white sugar
- ½ cup brown sugar
- 1 egg
- ½ tsp vanilla
- ¾ cup ripe banana 2-3
- ½ cup toasted pecans chopped
- 1-2 tbsp raw or white sugar sprinkle on tops, (optional)
Instructions
- Preheat the oven to 350 degrees. Coat a muffin tin with cooking spray or muffin liners.
- Combine the flour with the baking powder, baking soda, and salt; mix until very well combined.
- Beat the butter and cream cheese together with a hand mixer until creamy and smooth.
- Add the sugars and continue to beat with the hand mixer until light and fluffy.
- Add the egg and vanilla extract; mix well.
- Gradually add the flour mixture to the banana mixture and stir with a rubber spatula, making sure to scrape the sides of the bowl, until just combined.
- Stir in the mashed banana and nuts.
- Spoon the batter evenly in the muffin tin.
- Sprinkle the tops with a bit of raw or white sugar, if desired.
- Place into the oven and bake for 23-25 minutes, or until a tester inserted in the center comes out clean.
- Cool in the pans for 10 minutes before moving them to a wire rack to continue cooling.
- Serve with ice-cold milk and butter, if desired. Enjoy.
