Description

This Cream Cheese Flan recipe starts with melting sugar over low heat until golden caramel forms a base layer in an 8-inch round pan. The filling blends softened cream cheese beaten until smooth, eggs added one at a time, then evaporated and condensed milk stirred in. This mixture is poured over the caramel in the pan.

The flan is baked in a water bath (bain-marie) at 375°F for 50 minutes to an hour, which ensures slow, even cooking that prevents cracking and creates a creamy texture. The caramel base infuses subtle sweetness that contrasts nicely with the dense cream cheese custard.

The finished flan is cool and smooth with a delicate jiggly texture and a deep caramel flavor from the base. It can be plated upright, showcasing the glossy caramel topping, making it suitable for dessert occasions.

This flan can also be prepared in individual ramekins or traditional llaneras and steamed on the stovetop for about 30 to 40 minutes as an alternative cooking method. Letting the mixture rest before baking or blending it smooth helps reduce foam formation for an even custard.

  • ½ cup sugar
  • 1 package cream cheese 8 ounces, softened
  • 5 egg
  • 1 can evaporated milk 12 ounces
  • 1 can condensed milk 14 ounces

  1. Preheat oven to 375 F.
  2. Place the sugar in a pan and cook over low heat until sugar is melted and golden. Move the pan repeatedly over the flames to prevent sugar from burning and to distribute melting liquid on the bottom of the mold.
  3. Remove from heat and pour the caramel immediately into an 8-inch round pan, swirling the pan to evenly coat the bottom.
  4. In a large bowl, beat cream cheese with an electric mixer at low speed. until smooth and fluffy. 
  5. Add eggs one at a time, beating after each addition. 
  6. Add condensed milk and evaporated milk and stir until well-combined. Let the mixture sit for a few minutes to allow some of the foam to subside. Alternatively, combine eggs, evaporated milk, condensed milk, and cream cheese in a blender and process until smooth. 
  7. Pour the mixture into the prepared round pan.
  8. Cover llaneras with foil and arrange in a wide, oven-safe dish with about 1-inch of water (water bath).
  9. Bake in the oven for about 50 minutes to 1 hour or until a toothpick inserted in the middle of custard comes out clean. 
  10. Remove from oven, allow to cool and then refrigerate to set. To serve, turn flan over on a serving plate, ending with caramel on top.

Notes

  • Use llaneras or ramekins for individual servings, or a round pan for a single flan.
  • To steam instead of bake, cook on medium heat for 30 to 40 minutes until a toothpick inserted comes out clean.
