Description

Beginning with sifting flour, baking powder, and sugar, the recipe incorporates a mixture of egg, thickened cream, and milk. Most of the wet ingredients are added to the drys and gently mixed to form a slightly sticky dough, with additional liquid used as needed. After turning out onto a floured surface, the dough is lightly kneaded to avoid toughening.

Scones are cut using a 5 cm round cutter and arranged on a greased tray without crowding. The tops are brushed with remaining wet mixture before baking at a moderately hot oven temperature until lightly golden. The baked scones are wrapped in a clean tea towel while still warm, preserving softness.

  • 2 cups plain flour (250 grams)
  • 2 teaspoons baking powder
  • 3 tablespoons caster sugar
  • 1 medium egg
  • ½ cup thickened cream (heavy cream) (125 ml)
  • ½ cup milk (125ml)

Instructions

  1. Pre-heat oven to moderately hot (190-200 degrees celsius, fan-forced).
  2. Sift flour, baking powder and sugar into a bowl.
  3. Whisk egg, cream and milk together.
  4. Pour most of the wet ingredients into the bowl of dry ingredients. Keep a tablespoon or two of the wet ingredients aside.
  5. Mix ingredients using a butter knife or other flat-bladed knife knife. The mixture should hold together well and be a little sticky to touch. Add a little extra of the wet ingredients if the mixture is too dry.
  6. Turn onto a lightly floured surface and sprinkle a little extra flour over the mixture.
  7. Gently knead for 10 seconds. Shape the dough into a round about 2-3 cm thick.
  8. Use a 5cm (in diameter) round cutter to cut out 12 scones.
  9. Place the scones, not quite touching, on a greased tray.
  10. Brush the tops with the remaining wet mixture.
  11. Bake for 18-20 minutes or until a light golden colour.
  12. Once baked, transfer to a clean tea towel and wrap the scones before serving warm.
  13. Enjoy with cream and jam.
