Creamed Corn

Ingredients

  • 4 cups fresh or frozen corn kernels
  • ¼ cup unsalted butter
  • ¼ cup whole wheat flour
  • 2 cups milk
  • 1 tbsp granulated sugar optional
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup heavy cream or half-and-half

Instructions

  1. If using fresh corn, shuck the ears of corn and remove the kernels from the cob. If using frozen corn, thaw it according to package instructions.
  2. First, in a large skillet or saucepan, melt the butter over medium heat.
  3. Add the whole wheat flour to the melted butter and whisk continuously for about 1 minute, until the mixture becomes smooth and slightly golden in color.
  4. Gradually pour in the milk while whisking constantly to prevent lumps from forming.
  5. Add the corn kernels, sugar (if using), salt, and black pepper to the skillet. Stir to combine.
  6. Reduce the heat to medium-low and let the mixture simmer for about 10 to 12 minutes, stirring occasionally, until the corn is tender and the sauce thickens.
  7. Add the heavy cream or half-and-half to the skillet and stir it in for a rich and creamy consistency.
  8. Taste the creamed corn and adjust the seasoning if needed, adding more salt or pepper.
  9. Remove the skillet from the heat and let the creamed corn cool for a few minutes before serving.
  10. Finally, serve the creamed corn as a side dish alongside your favorite main course.
