Creamy Cajun Chicken
Description
This recipe begins by seasoning chicken breasts evenly with Cajun spice blend before searing them in olive oil until golden on both sides. Removed from the pan, the chicken rests while onions, green bell peppers, and celery are sautéed with garlic to build the sauce base. Heavy cream and freshly grated Parmesan are stirred in and brought to a simmer, creating a luscious, thickened cream sauce.
The chicken is returned to the skillet to finish cooking in the sauce, absorbing the flavors and becoming tender. The final dish presented with chopped parsley offers a balance of spice, creaminess, and savory elements.
Serving this dish alongside steamed rice or crusty bread can help balance the richness. Vegetable sides complement the hearty flavors.
The note suggests adjusting the Cajun seasoning amount to reduce heat according to preference. The recipe author uses a braiser pan, which may aid even cooking.
Ingredients
- 4 (7-ounce) chicken breast boneless skinless
- 2 tablespoons Cajun seasoning
- 3 tablespoons extra-virgin olive oil
- ½ cup yellow onion diced
- ½ cup green bell pepper diced
- 1 celery chopped, rib
- 2 garlic cloves
- 1 ½ cups heavy cream *see note above for dairy-free options
- ¼ cup Parmesan Cheese freshly grated
- parsley chopped, for garnish
Instructions
- Prep the chicken. Season both sides of each chicken breast with the Cajun seasoning.
- Sear the chicken. Heat 2 tablespoons of the oil in a large skillet over medium heat. Add the chicken and sear for 3 to 4 minutes on each side, until golden. Remove the chicken from the pan to a plate and set aside.
- Saute the veggies. In the same skillet, add another tablespoon of oil along with the onion, bell pepper, and celery. Saute for 3 to 4 minutes, until the veggies have softened. Add the garlic and saute for another minute.
- Add the heavy cream and parmesan cheese, stir together, and bring to a simmer.
- Let it simmer. Place the chicken back in the skillet and cook until heated through, about 5 minutes. Garnish with parsley before serving.
Notes
- Adjust Cajun seasoning quantity to control the spice level, using less for milder heat.
- A braiser or heavy pan works well for even cooking and sauce development.
