Crispy Chickpeas with Whipped Yogurt and Rice
Report
Easy, crispy chickpeas are so quick to bake up or put in the Airfryer. In this recipe I served them with a healthy rice, and creamy whipped yogurt.

Ingredients
- 1 package Cilantro Lime @RightRice
Crispy Chickpeas:
- 1- 550 ml can chickpeas washed, strained, and dried
- 2 tbsp. olive oil
- Juice of 1 lemon
- 1 tbsp. garlic powder
- 1 tbsp. umami powder
- 1 tsp. paprika
- 1 tsp. oregano
- 1/2 tsp. salt
- 1/2 tsp. pepper
- dash of red chili flakes
Creamy Whipped Yoghurt:
- 1 cup yogurt or 1/2 cup yogurt + 1/2 cup cream cheese
- 1 tbsp. lemon juive
- 1 tbsp. olive oil
- 1/2 tsp. sea salt
- 1/4 tsp. cracked pepper
- 1/4 cup chopped mint
Toppings:
- extra lemon or lime
- fresh mint
- hot sauce optional
Instructions
- Preheat the oven to 425F and line a baking sheet with parchment paper.
- To a large bowl, combine the chickpea ingredients and stir well until every chickpea is well coated.
- Transfer the uncooked, dressed chickpeas to the lined baking sheet and cook for 25 minutes, stirring and checking often to avoid burning.
- While the chickpeas cook, prepare the @RightRice as per package instructions.
- To make the whipped yogurt, add all of the ingredients to a deep bowl, and stir until well combined.
- Once the chickpeas are cooked and ready, you can begin portioning the @RightRice into bowls (serves 2), then add the whipped yoghurt, chickpeas, and any additional toppings as desired.

Notes
- Swap the yogurt with your favorite dairy-free substitute.
- This dish is great to make in larger quantity on a platter- serve it family style at a potluck! It'll be a huge hit!
- Add any extra herbs and spices you wish to the crispy chickpeas! Extra deliciousness!
- Store this ingredients of this rice dish seperately in airtight containers in the fridge for 3 - 5 days, and combine when ready to eat! YUM!
