Crispy Oven Roasted Potatoes Recipe (Easy and Best!)- Wow! These oven-roasted potatoes are so simple and tasty- a staple in our home! They are easy to make, and the whole family loves them. They are the perfect side dish for so many main dishes.

Ingredients
- 2 pounds small yellow or red potatoes potatoes halved or quartered
- 2 tablespoons olive oil
- 2 garlic cloves minced (or 1 teaspoon of garlic powder)
- 3 tablespoons fresh herbs finely chopped (any combination you have on hand: rosemary, parsley, thyme, basil, oregano, or marjoram)
- Coarse sea salt and black pepper to taste
- Optional: 1/4 teaspoon dried paprika or red chili flakes

Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl (or straight on the baking sheet*), toss the halved or quartered potatoes with olive oil until they are evenly coated.
- Add minced garlic and chopped fresh herbs of your choice to the potatoes. Toss again to distribute the flavors.
- Season the potatoes with coarse salt and pepper according to your taste preferences. Mix well.
- Spread the seasoned potatoes on a baking sheet or in a large baking dish, in a single layer for even roasting.
- Roast the potatoes in the oven for 20-30 minutes or until they turn golden brown and crispy. Keep an eye on them and stir halfway through to ensure even cooking.
- Once the potatoes are golden and crispy, remove them from the oven.

Notes
- *if using a baking sheet, you can use parchment paper, but it will slightly steam the potatoes rather than great crispy potatoes.
