Crock Pot Carne Guisada (Latin Beef Stew)

Crock Pot Carne Guisada is a slow-cooked Latin beef stew with tender chunks of beef, red potatoes, and a blend of spices including cumin and achiote. Cooked with aromatics like garlic, scallions, tomatoes, and cilantro, and finished with a light beer and flour-based browning, it delivers rich, hearty flavors with a thick stew consistency.

Description

This recipe for Crock Pot Carne Guisada starts by sautéing scallions, garlic, tomatoes, and cilantro to build the flavor base. Beef stew meat is browned with seasoning and flour to create a flavorful crust, then combined with beer, water, spices, and baby red potatoes in a slow cooker.

The stew slow cooks for several hours until the beef is tender and the potatoes have absorbed the savory juices. The achiote powder adds subtle color and warmth, complementing cumin and adobo seasoning. The resulting dish has a thick, stew-like consistency with a balanced depth of flavor, tender chunks of beef, and soft, cooked-through potatoes.

Crock Pot Carne Guisada is suited for a comforting meal and can be served with rice or tortillas. The slow cooking melds ingredients thoroughly, making it an ideal set-and-forget dish for any day.
