Ingredients
- 1 pound dried split green peas
- 1/2 onion diced
- 2 carrots peeled and diced
- 3 stalks celery diced
- 2 cups ham diced
- 2 teaspoons minced garlic
- 1 bay leaf
- 1 teaspoon dried thyme leaves
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
- 4 cups chicken broth
- 2 cups water
- fresh parsley chopped

Instructions
- Rinse the peas in a colander and pick out any debris from the peas that are in the package.
- Place all the ingredients (except for the parsley) with the peas in a 6 quart crock pot. Stir to combine.
- Cover and cook on low for 8-10 hours or on high for 4-5 hours until the peas are tender and have split open to have thicken the soup.
- Serve the soup topped with the fresh parsley and enjoy!
Notes
- Refrigerate the leftovers in an airtight container for up to 5 days.
