Ingredients
- 2 boneless, skinless chicken breasts
- 2 teaspoons ground black pepper divided
- 2 teaspoons garlic powder divided
- 2 teaspoons onion powder divided
- 2 tablespoons olive oil
- 2 cups long-grain rice
- 2 cups cheddar cheese divided
- 2 cups low-sodium chicken broth
- 10 ounces frozen broccoli florets (1 bag)
- 10.5 ounces cream of chicken soup (1 can)
- 10.5 ounces cream of broccoli soup (1 can)
- 2 ounces onion soup mix (1 packet)
- 1 teaspoon Italian seasoning store-bought or homemade

Instructions
- Slice the chicken breasts in half, and season them with half of the pepper, garlic powder, and onion powder.
- Heat the oil in a large skillet set over medium heat, and add the chicken. Cook each side just until browned and transfer them to a plate.
- Whisk together the rice, half the cheddar cheese, chicken broth, broccoli, cream of chicken soup, cream of celery soup, onion soup mix, Italian seasoning, pepper, garlic powder, and onion powder in the crockpot.
- Add the chicken on top of the rice mixture.
- Cover and set to high for 4 hours or low for 6 hours.
- During the last 30 minutes of cooking, top the chicken with the remaining cheese and place the cover back on.
Notes
- Storage: Store crockpot no peek chicken in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 1 month.
