There's nothing better than rice pudding — except for maybe a Risalamande recipe, which adds almonds & cherries to a creamy and perfect holiday dessert!

- 2 ¼ cups whole milk 18fl oz / 507ml
- 2 cups cherries fresh or frozen, 10oz / 284g
- ½ cup short-grain white rice
- 2 tablespoons sugar
- 2 tablespoons granulated sugar
- 1 teaspoon lemon juice
- ¼ teaspoon salt
- 6 tablespoons water
- ¾ cup almonds chopped and divided, 3¾oz / 106g plus ¼ cup (1¼oz / 35g), toasted
- 2 teaspoons cornstarch
- 1 teaspoon vanilla extract
- 1 cup heavy cream 8 fl oz / 225 ml
