  • 2 cups cherries fresh or frozen, 10oz / 284g
  • ½ cup short-grain white rice
  • 2 tablespoons sugar
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice
  • ¼ teaspoon salt
  • 6 tablespoons water
  • ¾ cup almonds chopped and divided, 3¾oz / 106g plus ¼ cup (1¼oz / 35g), toasted
