  • 110 grams cocoa powder (approx 1 cup - use carob for AIP)
  • 3/8 teaspoon Stevia extract (see Recipe Notes above)
  • 11 tablespoons low-carb sweetener see Recipe Notes above
  • 1 1/2 teaspoons vanilla
  • 1/4 teaspoon salt

Instructions

  1. Place all ingredients in a food processor.
  2. Blend thoroughly until smooth.
  3. Garnish with whipped cream, whipped coconut cream, chocolate shavings, chocolate nibs, chocolate chips, or nuts.
  4. Eat immediately to enjoy a Chocolate Avocado Pudding.
  5. Refrigerate for at least an hour to have Chocolate Avocado Mousse.
