Date Cake with Walnuts combines chopped dates soaked in hot water with yogurt, eggs, and butter to produce a moist batter studded with crunchy walnuts. Description

This recipe starts by soaking dates in boiling water to soften them unless using medjool dates, which can be added directly. The softened dates are drained, chopped, then folded into a batter made from creamed butter and sugar, eggs, vanilla, yogurt, and leavened with baking powder and soda. Chopped walnuts are folded in last to add crunch.

The mixture is poured into a parchment-lined pan and baked at 350°F for 45 to 60 minutes until a toothpick inserted comes out clean or with a few crumbs. After baking, the cake cools partially in the pan, then completely on a rack before slicing.

The resulting cake offers moist crumb with warmly sweet date flavor complemented by the nuttiness of walnuts and subtle vanilla notes. It pairs well with coffee or tea as a snack or dessert.

Notes advise starting to check doneness at 40 minutes since ovens vary, and handling of dates differs by variety, affecting soaking necessity. Deglet Noor dates require soaking while medjool do not.

  • 8 ounce dates pitter
  • 1 cup water boiling
  • 1 tick butter
  • 3/4 cup granulated sugar
  • 2 egg room temperature
  • 1/2 tsp vanilla extract
  • 1/3 cup PLAIN yogurt
  • 1 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup walnuts chopped

Instructions

  1. Preheat the oven to 350F. Line an 8x8 baking pan with parchment paper. 
  2. Place the dates and hot water in a bowl and let them site for 10 minutes. This helps the dates to soften. Drain and chop the dates after then minutes. 
  3. In a large bowl whip the butter and sugar until fluffy and light. 
  4. Add in eggs and vanilla extract. Mix well until fully incorporated. 
  5. Add in the yogurt and mix again.
  6. Add in flour, baking powder, and baking soda. Mix using a wooden spoon.
  7. Fold in chopped dates and walnuts. Do not over mix. 
  8. Pour the batter into the baking pan and bake in the oven for 45-60 minutes until a toothpick inserted in the middle comes out clean with very few crumbs. 
  9. Take the cake out of the oven and let it cool in the pan for 15 minutes. Transfer it to a cooling rack and cool completely before slicing. 

Notes

  • Deglet Noor dates require soaking in hot water to soften; medjool dates can be chopped and added without soaking.
  • Check the cake starting from 40 minutes baking time, as oven temperatures can vary.
