Dibis

Dibis is a date syrup consumed in Iraq and most of the Middle East. It is a very nutritious natural sweetener. Iraqis use it in several culinary preparations.

Ingredients

  • 5 lb dates pitted
  • 2 quarts water boiling

Instructions

  1. Wash the dates. Place them in a large pot and pour boiling water over them.
  2. Stir well, cover and let stand for 1 hour and 30 minutes.
  3. Place the pot over medium heat and bring to a boil.
  4. Reduce heat and simmer over low heat for 20 minutes.
  5. Remove from heat and let cool completely.
  6. Working with about 2 cups (500 ml) of the date mix at a time, pour the cooked dates into a large sieve or a cheesecloth placed on a large salad bowl.
  7. Crush them delicately by pressing them against the mesh with a wooden spoon and/or the hands.
  8. Once most of the liquid has run out the syrup is ready.
  9. Pour into jars and store in the refrigerator or in a cool place.
