  • 3 tablespoons light brown sugar
  • 1 tablespoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon chipotle powder or 1 tablespoon chipotle flakes
  • teaspoon ground black pepper
  • teaspoon smoked paprika
  • teaspoon cayenne powder

Instructions

  1. Combine 3 tablespoons light brown sugar, 1 teaspoon garlic powder, 1 tablespoon onion powder, 1 teaspoon chipotle powder, 1 teaspoon dried thyme, 1½ teaspoon ground black pepper, 1½ teaspoon smoked paprika, 1½ teaspoon cayenne powder in a bowl and mix till well combined.
  2. Add salt and rub over chicken before grilling (see notes*).

Notes

  • Cuts of chicken - use this rub for any cut of chicken from whole, breasts or thighs, to wings and legs. If leaving the skin on, apply the rub under the skin for best flavour.
  • Use a binder - (optional) brush a thin layer of mustard over the chicken before applying the rub so it adheres well.
  • How much rub to use - for one whole medium size chicken: 3 tablespoons of dry rub + ½ teaspoon salt, mixed well. Adjust the amount of salt according to your taste.
  • How much salt to use - add salt to the rub before using. The reason we made it salt-free is so you can add more rub for even more flavour and it won't make the chicken too salty, plus it is helpful for those with dietary restrictions.
  • Cooking methods - this rub is suitable for grilling, roasting and pan searing. Cook on medium to low for around 40 minutes, till a cooking thermometer inserted into the thickest parts of the chicken show 74℃/165℉.
  • Storing - keep any leftover dry rub in a sealed container in a cool dry place for up to a month. The moisture in the brown sugar may cause the seasoning to clump up so stir with a spoon and mix well before using.
