Dulce de Leche en Tabla [Video + Recipe] Dominican Fudge Candy
Description
This recipe starts by combining evaporated milk, sugar, and optionally lime rind in a saucepan to dissolve the sugar evenly. The mixture is simmered over medium heat with constant stirring to prevent scorching or boiling over, reducing to a consistency similar to drinking yogurt. The lime rind impart subtle citrus notes which balance the rich sweetness.
After simmering, the heat is turned off and an extra tablespoon of sugar is added while stirring vigorously to induce crystallization. This transforms the mixture’s texture from liquid to a thicker, fudge-like paste. The mixture is promptly poured into a mold to set before fully cooling.
Once cooled to room temperature, the dulce de leche firmens and is cut into small candy-sized squares. This candy has a smooth, slightly granular texture and a sweet, rich flavor with a gentle hint of lime. It is traditionally made using a shallow wooden mold called a tabla, but other food-safe molds can be used.
The recipe notes advise improvising with molds like plastic-lined milk cartons if a traditional madera tabla is unavailable, ensuring the right shape and portion size.
Ingredients
- 1 can evaporated milk 12 fluid ounces [354 mililiters]
- ¾ cup granulated sugar 150 grams] plus one tablespoon (divided
- 1 piece lime rind about 1 x ½ inch [1 x 2.5 centimeters], optional
Instructions
1. Mix ingredients
- In a large pot or 3-quart saucepan, combine lime rind, sugar, and evaporated milk. Stir until the sugar dissolves
2. Simmer
- Heat the milk over medium heat. Simmer stirring constantly to prevent the milk from overboiling or scorching.Cook until it reaches the consistency of drinking yogurt (about 15 minutes). Discard the lime rind,
3. Crystallize
- Turn of the heat and add the remaining tablespoon of sugar and stir vigorously to mix. The sugar will crystallize changing the consistency of the dulce de leche.
4. Mold
- Once the mixture has a similar consistency to cookie dough, pour into the prepared mold and level with a spatula. Try to do this immediately, as it will harden once it starts cooling.
5. Serving
- Let it cool to room temperature on the counter.Remove from the mold and cut into small candy-sized cubes or squares. Serve.
Notes
- You can use a food-safe mold of similar size if you don't have a traditional tabla; lining a milk carton with plastic wrap works well.
