Dulce de Leche Flan

Dulce de Leche Flan is a creamy baked custard made from eggs, dulce de leche, and evaporated milk with a caramel topping. This custard has a smooth, luscious texture and a deep caramel flavor infused with the sweet, rich notes of dulce de leche, baked in a water bath to ensure gentle cooking.

Description

This Dulce de Leche Flan recipe begins by creating a caramel sauce from sugar and water, cooked to a honey-gold color and poured into ramekins. The custard combines dulce de leche, eggs, and evaporated milk, gently mixed and strained before being poured over the caramel. The flan is then baked in a water bath to provide even, gentle heat, preventing curdling and producing a smooth, tender texture.

The resulting custard is dense yet silky, with a distinct caramelized sugar top and creamy interior flavored by dulce de leche's rich sweetness. The water bath method is key to avoiding cracks or bubbles, giving a clean finish when inverted onto plates.

Once cooled and chilled to set, the flan is served inverted, showcasing the glossy caramel atop the custard. It is an elegant dessert suitable for ending a meal or special occasion, enjoyed on its own without additional accompaniments.

Ingredients

Servings
  • 1 cup sugar
  • ¼ cup water
  • 1 can dulce de leche 14 ounces
  • 1 can evaporated milk 12 ounces
  • 6 egg

Instructions

  1. In a clear, microwave-safe bowl, combine water and sugar. Stir well under sugar is completely dissolved.
  2. Microwave on high for about 6 to 7 minutes or until color changes to honey-gold. Immediately pour into the ramekins, swirling around to cover the bottom.
  3. In a bowl, combine dulce de leche and eggs. Gently stir in one direction until smooth.
  4. Add evaporated milk and gently stir in one direction until well-combined.
  5. Using a fine-mesh sieve or cheesecloth, strain the mixture into a bowl. Pour into prepared ramekins and cover with foil.
  6. Arrange in a single layer in a wide, oven-safe pan. Carefully add about 1-inch of water to the pan (water bath).
  7. Bake in a 375 F oven for about 40 to 50 minutes or until a toothpick inserted in the middle of the custard comes out clean.
  8. Remove from oven, allow to cool, and refrigerate to set. To serve, turn flan over on a serving plate, ending with caramel on top.
