Dulce de Leche Recipe

This Dulce de Leche recipe transforms sweetened condensed milk into a creamy caramel sauce by baking it in a water bath. The process produces a smooth, golden caramel with a rich, sweet flavor suitable for desserts or toppings. Whisking after baking achieves a silky texture.

Description

The Dulce de Leche Recipe involves pouring sweetened condensed milk into a baking dish covered tightly with aluminum foil to prevent water from entering. This dish is placed in a larger pan filled halfway with hot water, creating a water bath. Baking at 425°F for about 90 minutes gently caramelizes the milk’s sugars, resulting in a thick, golden mixture. The gentle heat keeps the milk from burning and promotes even caramelization.

After baking, the foil is removed and the caramel is whisked until smooth and silky. The final product has a rich caramel flavor and creamy texture, ideal for spreading, drizzling, or incorporating into desserts.

Dulce de Leche can be stored in an airtight container refrigerated for up to three weeks or frozen for up to three months. It can be reheated gently in a microwave or saucepan. The recipe can be doubled by using two cans and extending baking time to about 1 hour 45 minutes.

Ingredients

Servings
  • 1 sweetened condensed milk

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius).
  2. Grab your can of sweetened condensed milk and pour it into a 9x9" baking dish.
  3. Next, cover the baking dish with aluminum foil. Be sure it is secured tightly so that no water from the water bath it will go into gets into the dish with the sweetened condensed milk.
  4. Place the 9x9" baking dish into a larger dish, such as a 13x9" pan.
  5. Add hot water to the large dish until it is about halfway up the 9x9" dish.
  6. Place the dish in your oven and cook for 90 minutes, checking the water level every 30 minutes and adding more water into the water bath that has evaporated while cooking.
  7. After 90 minutes of cooking, remove it from the oven and take the 9x9" pan out of the larger pan and the water bath. When you remove the foil, you should see that the color should be a caramel-like color.
  8. Using a whisk, whisk the cooked sweetened condensed milk until it is silky and smooth and voila, you have creamy Dulce de Leche!

Notes

  • To double the recipe, use two cans of sweetened condensed milk and increase baking time to 1 hour 45 minutes.
  • Store dulce de leche in an airtight container refrigerated for up to 3 weeks or frozen for up to 3 months.
  • Reheat gently in short microwave bursts or over low heat on the stove, stirring frequently.
