Dynamite Shrimp

Dynamite Shrimp features shrimp coated in a light, crispy batter made from a mix of flour, cornstarch, and baking powder combined with cold club soda. Fried until golden, the shrimp are then tossed in a creamy, sweet, and spicy sauce made from mayonnaise, sugar, and sriracha. The result is a crunchy exterior with a flavorful and mildly spicy finish.

Description

The shrimp are first dredged in a dry mix of flour, cornstarch, baking powder, salt, and white pepper, then dipped into a batter mixed with cold club soda for a light and airy coating. They are fried in hot oil until golden brown, which creates a crispy shell that contrasts with the tender shrimp inside. The frying process is quick, ensuring the shrimp retains juiciness.

A sauce made by whisking together mayonnaise, sugar, and sriracha provides a balance of creamy sweetness and spicy heat. The freshly fried shrimp are tossed in this sauce for even coating, delivering complex flavors with a spicy kick tempered by sweetness and creaminess.

This dish is ideal as an appetizer or snack and can be served immediately to preserve the crispiness of the coating.
