Easy baked feta pasta with bacon and mushrooms
Description
This recipe involves baking feta cheese along with halved or sliced mushrooms and chopped streaky bacon in a casserole dish seasoned with fresh thyme, garlic, salt, and pepper. The baking process softens the feta and melds flavors while giving mushrooms a tender texture and bacon a caramelized crispness. After baking, baby spinach is added to lightly wilt in the residual heat, enhancing freshness and nutrition.
Cooked pasta is then combined with the baked mixture, mashed feta, and optional sour cream, creating a creamy sauce that coats the noodles. Ingredients
- 500 g (1lb) mushrooms halved/sliced, depending on size
- 6 trips streaky bacon chopped
- 150 g (5 oz) feta cheese (2 squares/rounds)
- 2 garlic crushed, cloves
- 2 tsp olive oil
- 2 tsp thyme fresh
- ½ tsp salt
- ½ tsp black pepper
- 2 cups baby spinach
- 500 g (1lb) pasta
- 1 cup pasta water
- 2 tbsp sour cream (optional)
- parmesan to serve
Instructions
- Preheat the oven to 200°C/390°F.
- Place the feta cheese, mushrooms and bacon in a casserole dish.
- Drizzle with olive oil, add the garlic and thyme then season with salt and pepper.
- Place in the oven and bake for 15-20 minutes until the mushrooms and bacon are cooked through and golden.
- Add the spinach and bake for another 5 minutes.
- While the feta is baking, bring a large pot of salted water to the boil. Cook the pasta for 10-12 minutes until cooked to your preference.
- Reserve 1 cup of pasta cooking water and drain.
- Mash the baked feta with a fork and mix to combine with the mushrooms, spinach and bacon.
- Add the pasta, sour cream (if using) and a splash of the pasta water. Mix well, adding more water if necessary.
- Adjust seasoning then serve topped with Parmesan.
