This Easy Baked Greek Chicken with Potatoes features seasoned chicken thighs and cubed potatoes roasted together with olive oil, lemon, garlic, oregano, and rosemary. The dish results in tender, juicy chicken and crispy, herb-infused potatoes, all baked on one sheet pan for straightforward preparation and flavorful outcome.

Description

The recipe combines 8 chicken thighs with cubed large potatoes in a bowl with olive oil, lemon juice, garlic, dried oregano, rosemary, salt, and pepper. The potatoes are coated first and spread on a sheet pan. The chicken is then seasoned and placed among the potatoes, with remaining oil, lemon, and herb mixture poured over. Optional lemon slices can be added on top of the chicken before baking.

Baked at 200ºC (390ºF) for 45-60 minutes, the chicken develops a golden brown skin while staying juicy inside. Tossing the potatoes halfway enhances their even browning and crispiness. The garlic and herbs infuse both chicken and potatoes, producing a bright, savory Mediterranean flavor profile.

Ingredients

  • 8 chicken thighs
  • 4 large potato cubed
  • 3 tbsp olive oil
  • 2-3 tbsp lemon juice
  • 3-4 garlic crushed, cloves
  • 1 tbsp oregano dried
  • 1 tsp rosemary finely chopped
  • salt to taste
  • black pepper to taste

Instructions

  1. Pre-heat the oven to 200ºC/390ºF. 
  2. Place the potatoes in a large bowl then drizzle over 2 tbsp olive oil, a tbsp lemon juice and season with half of the garlic, herbs, salt and pepper. Mix well then place in a large sheet pan. 
  3. Season the chicken thighs generously with salt and pepper then mix the remaining olive oil and lemon juice with the garlic and herbs. Place the seasoned chicken in between the potatoes in the sheet pan and pour over the herb mixture. Top the chicken with lemon slices (optional). 
  4. Place in the oven and allow to bake for 45-60 minutes or until the chicken is golden brown and cooked through and the potatoes are crisp and cooked. (I tossed the potatoes half-way through cooking to ensure even browning.)
  5. Remove from the oven and serve with Greek salad.
