Easy Bavarian Cream

Easy Bavarian Cream is a rich vanilla custard base made by thickening milk, sugar, flour, salt, and egg yolks, then lightened by folding in whipped cream. The result is a smooth, creamy dessert filling with a delicate sweetness and vanilla flavor, ideal for pastries or as a standalone dessert.

Description

This recipe starts by mixing sugar, flour, and salt with milk, then gradually heating while stirring until thickened, creating a custard base. Egg yolks are whisked in to enrich the mixture. After reaching pudding-like thickness and boiling, butter and vanilla are added for richness and aroma.

Once cooled, the custard is combined with softly whipped cream folded in gently to create a lighter, airy texture characteristic of bavarian cream. This creamy mixture can be piped or spooned into desserts such as cream puffs or used as a filling.

The preparation steps emphasize constant stirring to avoid lumps and careful folding to maintain the cream's airiness. Cooling completely before folding helps achieve the ideal consistency. This basic bavarian cream supports customization with fruit purees or flavorings if desired.

Ingredients

  • 1 cup sugar
  • 3/4 cup all-purpose flour
  • 3/4 tsp salt fine sea salt
  • 3 cups milk
  • 3 egg yolk
  • 2 tbs butter
  • 2 tsp vanilla
  • 1/2 cup whipping cream

Instructions

  1. In a medium sauce pan, mix your sugar, flour and salt with a whisk. Gradually add the milk and mix well.
  2. In a separate bowl whisk egg yolks and add to the pan. Mix well. Bring mixture to a boil over medium high heat stirring constantly until mixture becomes thick and has the consistency of pudding.
  3. Take off heat and add butter and vanilla to the pan, stirring until well combined and butter is melted. Cool completely. I put mine in the fridge to help speed up the cooling process.
  4. You have just created a vanilla custard. This is heavenly on it's own, but to give it a Bavarian cream texture it needs to be a little lighter in texture. We do this by taking a 1/2 cup of heavy whipping cream, whipping it until soft peaks form and gently folding the whipped cream into the custard mixture.
  5. Place into a piping bag to be used in the cream puffs.
