  • 2 small shallot minced
  • 2 tablespoons tomato paste
  • ½ cup chicken stock or vegetable stock
  • salt to taste, sea salt
  • black pepper to taste, sea salt

Instructions

  1. Place the shrimp in a bowl and toss with the Cajun seasoning, olive oil, salt, and chili flakes. Set aside to marinate while you prep the veggies.
  2. Heat a large skillet over medium-high heat. Add the shrimp and sear for 2 minutes. Add the peppers and shallots to the pan then cook for 2 more minutes.
  3. Lower the heat to medium and push the shrimp and veggies to the side of the pan. Add the tomato paste and let it caramelize for 2-3 minutes, or until it darkens and smells sweet.
