Easy Chicken Paprikash

Ingredients

  • 1 tablespoon vegetable oil
  • 1 yellow onion minced
  • 2 cloves garlic minced
  • 3 Roma tomato minced
  • 3 chicken breast cut into 2 inch pieces, boneless skinless
  • ¼ cup smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups chicken broth
  • 3 tablespoons all-purpose flour
  • 1 cup sour cream
  • ¼ cup heavy whipping cream

Instructions

  1. In a large pot, heat your vegetable oil over medium high heat. Saute your onion until they soften and just begin to color.
  2. Add in your garlic and tomatoes and saute for another 2-3 minutes. Add in your chicken and paprika, salt, and pepper, cook until all the chicken is nearly cooked through, about 5-8 minutes.
  3. Add in your chicken broth and bring to a rolling boil. Reduce heat to low and simmer for 4-5 minutes.
  4. Whisk in your flour, be sure no clumps form. Continue simmering until the liquid has begun to thicken. Add in your sour cream and heavy whipping cream. Continue to simmer and stir periodically for about 10 minutes.
  5. Serve over noodles or dumplings and enjoy!
