Description

The recipe involves blending a mixture of onions, garlic, ginger, tomato puree, and spices including coriander, cumin, turmeric, paprika, and garam masala into a smooth curry paste. Chicken thighs are scored to allow better absorption of the sauce, then placed on a wire rack over a dish, coated generously with the curry paste. They bake at a high temperature followed by a brief broil to deepen the sauce’s caramelization and flavor.

This dish pairs well with side staples like basmati rice or naan bread and can serve as a main meal that balances aromatic spices with tender, succulent chicken thighs. Resting the chicken before serving helps juices redistribute, preserving moistness in each bite.

Ingredients

  • 1 onion quartered
  • 4 garlic cloves
  • 2 tsp ginger crushed
  • 1 cup tomato puree
  • 1 tsp ground coriander
  • 1 tsp cumin ground
  • 1 tsp Turmeric
  • 1 tsp paprika
  • 2 tsp garam masala
  • 1 tbsp lemon juice
  • 1 cup PLAIN yogurt
  • 1 tsp salt
  • 8 chicken thighs

Instructions

  1. Pre-heat the oven to 200ºC/400ºF.
  2. Combine all the ingredients (except for the chicken) in a blender and mix until smooth. 
  3. Cut a few slices into each chicken thigh then place on a wire rack over an oven-proof dish. 
  4. Place the chicken thighs on the wire rack then pour over the curry paste/sauce. Push the sauce into the slices then place into the oven. 
  5. Allow to bake for 25 mins or until the chicken is cooked, then turn on the grill/broiler and allow the top of the chicken to caramelise for another 5-10 minutes.
  6. Remove from the oven and allow to rest for 5 mins before serving.
