Easy Chocolate Mousse

Easy Chocolate Mousse combines bittersweet chocolate melted with water, whipped egg whites, and egg yolks to create a light, airy dessert with a smooth and rich chocolate flavor. The folding technique preserves the mousse’s delicate texture. Chilling before serving allows it to set to a creamy, fluffy consistency perfect for individual servings.

Description

This recipe for Easy Chocolate Mousse uses bittersweet chocolate melted gently with water to form a smooth base. Egg yolks are incorporated into the cooled chocolate, lending richness and body. Separately, egg whites with a pinch of salt are whipped to stiff peaks to create volume and lightness.

Folding the whipped egg whites carefully into the chocolate mixture helps maintain an airy texture. The mousse chilled for at least three hours develops a creamy, delicate structure that holds its shape while still soft.

Serving individually allows for personalization and presentation with toppings like whipped cream or chocolate shavings, enhancing the dessert without overpowering the chocolate flavor.

Ingredients

  • 7 oz bittersweet chocolate finely chopped, or semisweet chocolate
  • 3 tablespoons water
  • 4 egg at room temperature, separated, large
  • Pinch salt coarse

Instructions

  1. Combine the chocolate and water in a heatproof bowl set over a pan of barely simmering water. Heat until the chocolate is almost completely melted, stirring occasionally. Remove the bowl from the heat and stir until the mixture is smooth. Set aside and let cool to near room temperature.
  2. In a clean, dry bowl of a stand mixer fitted with the whisk attachment, combine the egg whites and the salt. Whip on medium-high speed until stiff peaks form. They should be thick and smooth.
  3. Stir the egg yolks into the cooled chocolate mixture. Add one third of the whipped egg whites to the bowl with the chocolate and fold gently to lighten up the mixture. Fold in the remaining egg whites gently with a spatula just until no visible streaks are left.
  4. Portion the mixture into 4 individual serving dishes (or 2 larger serving dishes, for a romantic, share-friendly dessert). Cover with plastic wrap and refrigerate at least 3 hours. Serve with freshly whipped cream and chocolate shavings, if desired.
