Easy Cinnamon Apple Cake

This Easy Cinnamon Apple Cake layers sliced apples macerated with sugar and lemon juice into a spiced batter with cinnamon and cloves. Baking softens the apples further and blends their sweetness through the moist cake. The spice mix complements the apple’s tartness for a balanced flavor.

Description

The recipe begins by slicing firm apples and tossing them with sugar and lemon juice to soften and release juices. This mixture combines with oil, eggs, and vanilla before folding in flour, baking soda, cinnamon, salt, and cloves. Baking in a greased dish yields a tender cake that maintains moist pockets of softened apple slices throughout.

The cake is pleasantly spiced and mildly sweet with apple pieces dispersed in every bite. It is well-suited for serving with freshly whipped cream to add lightness and extra flavor contrast.

Choosing crisp apple varieties like Granny Smith and Honeycrisp balances tartness and sweetness while holding their texture during baking. Slicing apples about a quarter inch thick allows for even softening without turning to mush.

Ingredients

Servings
  • 4 cups apple about 3-4 apples depending on the size of your apples (peeling optional, sliced
  • 1 tablespoon lemon juice fresh
  • 2 cups white sugar
  • ¾ cup coconut oil or avocado oil
  • 2 egg large
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon kosher salt
  • ¼ teaspoon cloves ground

Instructions

  1. To prepare the apples, peel and core about 4 apples. Slice them into about ¼ inch thick slices and place them into a large bowl. Pour the sugar over the apples and give them a quick toss with your hands and then add the lemon juice. Let the apples and the sugar sit for about 30-45 minutes. This process will soften the apples and dissolve the sugar.
  2. Preheat oven to 350 degrees F.
  3. Add the oil, eggs and vanilla to the apple mixture and stir together with a spoon.
  4. Add the flour, baking soda, cinnamon, salt and cloves into the apple mixture. Combine with a spoon carefully until the dry mixture is just incorporated.
  5. Spray a 9x9 or 9x13 baking dish with baking spray and line with parchment paper. Transfer the batter into the baking dish and bake in a preheated oven for 50-55 minutes for a 9x9 or 45-50 minutes for a 9x13, or until a knife can be inserted in the center and comes out clean.
  6. Serve with freshly whipped cream.

Notes

  • Use firm apple varieties such as Granny Smith and Honeycrisp for texture and balanced flavor.
  • Slicing apples about ¼ inch thick ensures they soften without becoming mushy during baking.
  • Serve with freshly whipped cream to complement the spice and apple tartness.
