Chicken and steak Skewers:

  • 3 lb chicken breast boneless skinless
  • 1.5 lb sirloin steak
  • 1.5 cup olive oil
  • 3 tbsp Greek seasoning blend
  • 1/4 cup lemon juice
  • 10 cloves garlic

Greek salad: 

  • 4 romaine lettuce hearts
  • 2 cucumber medium
  • 4 tomato medium
  • 4 oz feta cheese
  • 3 oz kalamata olives
  • 2 tbsp parsley fresh chopped
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/2 tbsp Greek seasoning
  • 3 cloves garlic

Lemon Herb Roasted Potatoes: 

  • 2 lbs baby red potato or yellow potato
  • 2 tbsp olive oil
  • 1/2 tbsp Greek seasoning
  • 1 tbsp lemon juice
  • 1 tbsp parsley fresh chopped
  • 1/2 tbsp dill fresh, chopped

Appetizer Tray: 

  • 1 tzatziki dip container
  • 1 hummus plain, container
  • 1 baby carrots bag
  • 3 celery stalks
  • 1 cucumber medium
  • 4 pita bread rounds
  • olive oil optional
  • fresh herbs optional

Instructions

  1. Prepare the chicken and steak skewers a few hours prior to cooking to allow them to marinate
  2. Take 20 small-medium skewers and soak them in water until you are ready to cook the meats
  3. Cut the chicken and steak into bite-sized cubes
  4. Combine 1 cup olive oil, 6 smashed cloves of garlic, 2 tbsp Greek seasoning, and 1/4 cup lemon juice and pour over cubed chicken
  5. Combine 1/2 cup olive oil, 4 smashed cloves of garlic, and 1 tbsp Greek seasoning and pour over cubed steak
  6. Toss chicken and steak in their marinades separately and place in covered bowls or containers in the fridge to marinate for at least 3 hours
  7. Prepare the appetizer board by cleaning and chopping veggies, placing dips in bowls, lightly toasting pita on the stovetop and cutting into points
  8. Garnish the dips with a drizzle of olive oil and fresh herbs
  9. Arrange all items on a large platter for guests
  10. Prepare the salad by washing the veggies and romaine lettuce
  11. Chop romaine lettuce and place in a large salad bowl
  12. Top lettuce with chopped cucumber, quartered tomatoes, kalamata olives and cubed or crumbled feta
  13. Garnish salad with fresh herbs
  14. Prepare dressing by combining olive oil, red wine vinegar, 1/2 tbsp Greek seasoning and smashed garlic cloves – set dressing aside and wait to toss and dress salad until guests are ready to eat – do not pour garlic cloves on salad
  15. Preheat the oven to 400F 
  16. Quarter or half the baby potatoes and toss in oil and greek seasoning
  17. Cook on a lined baking sheet for 25 minutes, toss and cook for an additional 20 minutes
  18. Toss cooked potatoes in lemon juice and fresh herbs
  19. While the potatoes cook prepare skewers by sliding beef and chicken onto separate sets of skewers and discard the smashed garlic cloves
  20. Cook skewers on a grill pan over medium heat
  21. Cook the chicken skewers for 12 minutes rotating every 2 minutes
  22. Cook the steak skewers 8 minutes rotating every 2 minutes
  23. Dress and toss the salad, serve the skewers on a platter, and serve the potatoes in a large bowl
