  • 2 cups flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup PLAIN yogurt
  • 1 cup caster sugar
  • 3 egg large
  • ½ cup canola oil
  • ½ tsp vanilla extract
  • lemon zest of 1

For the icing

  • 2 cups powdered sugar aka icing sugar
  • lemon juice of 1

Instructions

  1. Pre-heat the oven to 180ºC/350°F and grease and line a loaf pan with baking paper. 
  2. Stir together the flour, baking powder and salt. 
  3. In a jug, mix together the sugar, yoghurt, oil, lemon zest, vanilla and eggs. 
  4. Pour the wet ingredients into the dry and mix well. 
  5. Transfer to the loaf pan and place in the oven. 
  6. Bake for 30-45 minutes or until a skewer inserted comes out clean. Remove from the oven and allow to cool. 
  7. To make the icing, whisk together the icing sugar and lemon juice until smooth. 
  8. Pour the icing over the cooled cake and serve.
