Easy lemongrass simple syrup infuses sliced white lemongrass stalks into water, simmered to reduce volume and concentrate flavor, then sweetened with gula melaka, a palm sugar. This syrup carries a gentle grassy aroma with sweet caramel notes from the sugar, making it suitable for drinks, desserts, or as a flavor enhancer in various dishes.

Description

This syrup is made by boiling water and lemongrass together, then simmering to reduce the liquid, intensifying the aroma and taste of lemongrass. Gula melaka, a block palm sugar ingredient, is dissolved off the heat to avoid graininess, resulting in a delicate amber syrup with balanced sweetness and fragrant herbal notes. The syrup is cooled and strained before storage.

Use within a week stored refrigerated in an airtight container, taking care to discard if it becomes cloudy. The syrup is thin in consistency and designed for subtle flavoring rather than thick sweetness. Variations include thicker syrups made by adjusting sugar-to-water ratios. It can be used to enhance teas, cocktails, or Asian-inspired dishes.

  • 2 talks lemongrass You can keep the top green part to infuse in soups, curries and even make tea, washed, bashed, root cut off, white part sliced thinly
  • 2 Cups water
  • 1 Cup gula melaka Substitute: coconut sugar, brown sugar, white granulated sugar etc, usually comes in blocks; may need to grate or pound
  • salt This works as a flavour intensifier, Optional, pinch

Instructions

  1. Add the water and lemongrass to a pot and bring to a boil.
  2. Reduce the fire and allow the mixture to simmer (Ie. small bubbles only) till the water is reduced by about half. This will take about 15 minutes, depending on the strength of your fire.
  3. Once the water is halved, add the Gula Melaka, switch off the fire and stir till dissolved. Make sure the bigger lumps are completely dissolved.
  4. Allow to cool then strain into a glass jar and store in the fridge.
  5. Use within 1 week. Do not use if cloudy (time to bin)

Notes

  • Store the syrup in the fridge in an airtight container for up to one week and discard if it turns cloudy.
  • The syrup has a watery consistency and is not thick like maple syrup; cooking longer can thicken it.
  • Substitute gula melaka with coconut sugar, brown sugar, or white sugar if needed, grating or pounding blocks as necessary.
