An Easy Lobster Roll is a heavenly sandwich with a soft and chewy bun that's stuffed with cool, fresh lobster salad made from a sweet mayonnaise base. Every bite is packed with crave-worthy flavor that is light and tasty!

Ingredients
- 4 lobster tails
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 2 tablespoons chopped fresh chives
- salt and pepper to taste
- 4 Hoagie rolls
- lettuce optional for serving

Instructions
- Bring a large pot of water to a boil. Add 4 lobster tails and cook for 5-8 minutes until they turn red. Remove the cooked tails from the water using tongs and place them in an ice bath for 5 minutes.
- Remove the lobster from the ice bath then crack the shells and remove the meat. Cut the lobster meat into large chunks.
- In a medium-sized bowl, add the lobster chunks, 3 tablespoons mayonnaise, 1 teaspoon Dijon mustard, 2 tablespoons chopped fresh chives, and salt and pepper to taste. Gently stir to combine.
- Slice the 4 hoagie rolls, and lettuce if desired, and spoon on the lobster mixture. Sprinkle with paprika for garnish if desired!
