Easy Mango Chutney (Old-Fashioned Recipe)
Description
This old-fashioned mango chutney begins by sautéing garlic, onion, and grated fresh ginger in flavorless vegetable oil until onions are translucent. The mixture is combined with chopped mango, white sugar, vinegar, mustard seeds, cumin, red pepper flakes, and cinnamon before gently simmering uncovered for about an hour. Stirring occasionally prevents sticking and helps the flavors mingle.
The mango breaks down partially during cooking, and mashing the chutney further softens large chunks, creating a textured yet spreadable condiment. The combination of vinegar and sugar provides a balanced sweet-tart profile, while spices like mustard seeds, cumin, and cinnamon contribute warmth and mild heat. The chutney complements savory foods by adding fruity acidity and spice.
It can be served warm or cold, offering versatility as a topping or side. Using frozen mangoes is acceptable when fresh ones are unavailable, ensuring year-round preparation. For less sweetness, sugar substitutes like natural Stevia-based Truvia may be used without affecting texture significantly.
Ingredients
- 1 Tbsp vegetable oil 15 mL, flavorless
- 2 cloves garlic minced
- ½ medium white onion finely chopped
- 2 tsp ginger grated fresh
- ½ cup white sugar 100 g
- ½ cup white vinegar 120 mL
- 1 tsp mustard seeds
- ½ tsp cumin
- ½ tsp red pepper flakes
- ¼ tsp cinnamon
- 3 Mango about 3 heaping cups, frozen works too, large; peeled and chopped
Instructions
- Saute: Heat oil in a saucepan over medium heat, then saute garlic, onion, and ginger until onions are slightly translucent, about 5 minutes.
- Simmer: Add the onion mixture to a large pot along with the rest of the ingredients. Stir well and bring to a gentle simmer over medium/low heat. Cook uncovered for 1 hour, stirring occasionally.
- Mash: Mash with a fork or potato masher to break down remaining large mango chunks (smaller pieces are fine). Serve warm or chilled.
Notes
- Sugar substitutes like natural Stevia sweeteners can replace sugar for a less sweet chutney with similar results.
- Store leftover mango chutney in an airtight container in the refrigerator for up to two weeks.
