Easy Microwave Peanut Butter Fudge
Description
This fudge recipe starts by preparing an 8-inch square pan lined with parchment paper. Icing sugar is sifted to remove lumps. In a microwave-safe bowl, butter, peanut butter, and vanilla extract are melted together in short intervals, stirring midway, until fully liquid. This mixture is then combined with the icing sugar by stirring vigorously to achieve a smooth, even consistency without lumps.
The smooth peanut butter mixture is transferred to the lined pan, spread evenly, and allowed to cool and firm up. The fudge sets into a creamy, sweet confection with the characteristic nutty peanut butter taste, perfect for slicing into squares.
Ingredients
- 450 grams icing sugar sifted
- 250 grams peanut butter or crunchy, smooth
- 230 grams butter unsalted
- 1 teaspoon vanilla extract
Instructions
- First, line a 20cm/8 inch square tin with parchment paper, leaving some overhang on the sides.
- Next, sift the icing sugar into a large bowl. If you don't want to sift it, at least use a fork to break up any visible lumps in the sugar before using.
- Add the unsalted butter, peanut butter and vanilla extract to a microwave-safe bowl.
- Microwave for 2 minutes, stirring once halfway through, until melted and liquidy.
- Give the mixture a good stir with a spatula or spoon until thoroughly combined and smooth.
- Pour this melted peanut butter mixture into the bowl of icing sugar.
- Stir everything together, making sure to fully incorporate all of the icing sugar, including any leftover on the bottom of the bowl. Keep mixing until you have an evenly smooth texture throughout.Using a squishing motion with the spatula helps force the icing sugar into the mixture.
- Spoon the fudge mixture into the prepared tin.
- Push it into the corners and level off the top. An offset spatula is ideal for creating a nice smooth surface.
- Pop the fudge in the fridge for at least 1 hour to firm up and cool down - longer is even better.
- Once set, lift it out onto a chopping board. Score lines on top for where you want to slice.
- Cut into neat pieces with a large, sharp knife.
