Description

The Easy Plum Flan combines a batter of eggs, milk, sugar, vanilla, nutmeg, salt, and all-purpose flour, blended until smooth and poured into a greased pie plate. Ingredients

  • 4 Large egg
  • ¾ c milk I used whole milk
  • ½ c sugar
  • 1 tablespoon vanilla
  • teaspoon nutmeg
  • ¼ teaspoon salt
  • ½ c all-purpose flour
  • 2 c plum pitted and cut into quarters or sixths
  • butter To grease pie plate
  • confectioners sugar Optional, for dusting

Instructions

  1. Preheat oven to 350' F and lightly butter a 9" heavy pie plate. (I use a Pyrex glass pie plate)
  2. In blender add eggs, milk, sugar, vanilla, nutmeg and salt and blend well for 30-60 seconds.
  3. Add flour and blend again until smooth, 60 seconds, then pour into greased pie plate.
  4. Arrange the sliced plums over the top and bake in oven 25-30 min.  Clafoutis will be lightly browned and should still have a slight jiggle in the middle. 
  5. Let cool slightly and serve warm, sprinkled with confectioners sugar.If serving later, rewarm slightly before serving. 

Notes

  • Do not overcook; the flan should retain a slight jiggle for the proper custard texture.
  • Serve warm, optionally dusted with confectioners sugar for a subtle sweetness.
  • Rewarm gently if serving after cooling to restore softness.
