Easy Plum Flan
Description
The Easy Plum Flan combines a batter of eggs, milk, sugar, vanilla, nutmeg, salt, and all-purpose flour, blended until smooth and poured into a greased pie plate. The flan is topped with quartered or sliced plums arranged evenly. Baking at 350°F yields a custard-like consistency with a slight jiggle in the center and a light golden crust on top. The plum topping gently softens during baking, adding a sweet, subtly tart contrast.
The texture achieved is between that of a cake and a custard, characteristic of clafoutis-style desserts. This gentle baking method preserves the delicate plum flavor while imparting warmth and richness from the custard base. The interplay of creamy custard and tender fruit makes this dessert well-suited to be served warm, often dusted with confectioners sugar.
Reheating slightly before serving is suggested if prepared in advance to restore softness. The recipe notes that avoiding overcooking is key to retaining the proper consistency, preventing the flan from becoming firm or dry.
Ingredients
- 4 Large egg
- ¾ c milk I used whole milk
- ½ c sugar
- 1 tablespoon vanilla
- ⅛ teaspoon nutmeg
- ¼ teaspoon salt
- ½ c all-purpose flour
- 2 c plum pitted and cut into quarters or sixths
- butter To grease pie plate
- confectioners sugar Optional, for dusting
Instructions
- Preheat oven to 350' F and lightly butter a 9" heavy pie plate. (I use a Pyrex glass pie plate)
- In blender add eggs, milk, sugar, vanilla, nutmeg and salt and blend well for 30-60 seconds.
- Add flour and blend again until smooth, 60 seconds, then pour into greased pie plate.
- Arrange the sliced plums over the top and bake in oven 25-30 min. Clafoutis will be lightly browned and should still have a slight jiggle in the middle.
- Let cool slightly and serve warm, sprinkled with confectioners sugar. If serving later, rewarm slightly before serving.
Notes
- Do not overcook; the flan should retain a slight jiggle for the proper custard texture.
- Serve warm, optionally dusted with confectioners sugar for a subtle sweetness.
- Rewarm gently if serving after cooling to restore softness.
