Easy & Simple Boba Mint Chocolate Mousse
Description
This mousse starts by heating a mixture of dark chocolate chips with milk, coconut milk, agar agar powder, sugar, and peppermint extract to boiling while whisking, ensuring all ingredients are well combined. Pouring the mixture through a fine sieve into molds and refrigerating allows it to set into a smooth, firm but tender texture.
Boba pearls are cooked by simmering in boiling water for 25 minutes until soft yet chewy, then soaked further to complete cooking. They are drained, rinsed, and mixed with brown sugar to add sweetness and a sticky glaze. The boba pearls provide a contrasting texture to the creamy mousse, making the dessert playful and texturally interesting.
The mousse should be chilled at least several hours or overnight for best set. Serving involves unmolding or serving directly in dessert bowls with the sugared boba pearls placed on top or alongside.
Ingredients
For the Mousse
- 4.93 oz dark chocolate chips or vegan chocolate chips for a dairy-free option
- 6.76 fl oz. milk or plain oat milk or almond milk for a dairy-free option
- 6.76 fl oz. coconut milk full fat
- ½ teaspoon agar agar powder
- 2 tablespoon granulated sugar or cane sugar, white
- 1 teaspoon peppermint extract
For the Bobas
- 1 cup boba uncooked, store-bought
- 1 tablespoon brown sugar
Instructions
- In a small pot, whisk together the chocolate mousse ingredients as listed until combined. Bring this mixture to a boil over high heat for 60 seconds, while whisking.
- Remove the pot off the heat and quickly pour it into four small dessert bowls or molds through a fine sieve. Refrigerate for at least 3-4 hours or overnight for the mousse to set.
- Bring a large pot of water to boil over high heat. Add bobas and reduce to medium heat to simmer for 25 minutes, stirring occasionally. Do not cover.
- Remove the pot of bobas from the heat, cover and let bobas sit in their liquids for another 20 minutes. Then strain and rinse bobas under warm water.
- Transfer cooked bobas into a large bowl and mix in brown sugar until combined and dissolved.
- Remove the mousse from the fridge and carefully remove it from the molds or leave in the dessert bowls to serve with the sugared bobas.
