Description

This coulis begins by combining hulled, halved fresh strawberries with white sugar and fresh lemon juice in a saucepan. The mixture is brought to a boil while stirring to dissolve sugar, then reduced to a simmer for 10 minutes. After cooking, the sauce is blended until smooth and optionally strained to remove seeds, resulting in a fine textured sauce that coats the back of a spoon.

The natural sweetness of ripe strawberries is complemented by lemon's acidity, and the sugar helps preserve sweetness and balance tartness. The cooking process softens the fruit, allowing it to be easily pureed into a sauce.

Strawberry coulis pairs well with desserts such as ice cream, cheesecake, pancakes, or yogurt. It can be stored refrigerated for up to three days or frozen as ice cubes for convenient thawing and use.

  • 14 ounces strawberry 400g, washed, hulled, and halved or quartered, fresh
  • ½ cup white sugar 100g
  • 1 tablespoon lemon juice fresh

Instructions

  1. Combine 14 ounces fresh strawberries, ½ cup white sugar and 1 tablespoon fresh lemon juice together in a saucepan and bring to a boil on medium heat, stirring occasionally.
  2. Turn down to low heat and allow to simmer for 10 minutes.
  3. Turn off the heat and blend to a smooth sauce (which will coat the back of a spoon*). Strain to remove any seeds (optional), then set aside to cool before serving.

Notes

  • Store in an airtight container in the fridge for up to 3 days.
  • Freeze coulis in ice cube trays, then store cubes in labelled bags for long-term storage.
  • Defrost only the amount needed in the fridge to maintain freshness.
  • Check consistency by running a finger down the back of a spoon; if it leaves a clear line, it is ready.
