Easy Sugar Free Frozen Yogurt
Description
The recipe uses Greek yogurt as a creamy base, mixed with allulose—a low-calorie sweetener—and vanilla extract for flavor. The ingredients are whisked together until smooth and sweetened to taste. One method involves freezing the mixture in ice cube trays before blending in a high-speed blender to achieve smooth frozen yogurt without ice crystals.
Alternatively, freezing the mixture in an ice cream maker produces soft serve yogurt within about 20 minutes. For firmer, scoopable frozen yogurt, it can be transferred to a container and frozen further. The texture is creamy and mild, reflecting the natural tang of Greek yogurt balanced by gentle sweetness.
This frozen yogurt provides an option for those avoiding added sugars while still enjoying a satisfying frozen dessert. It is portioned to yield about eight scoops and stores well when kept frozen. Variations in sweeteners are possible, though they may affect texture or freezing performance.
Basic methods without specialized equipment include periodically stirring the freezing mixture to prevent large ice crystals and achieve a smoother consistency.
Ingredients
- 3 cups Greek yogurt 750g
- ⅓ cup allulose 65g ***see notes
- 1 teaspoon vanilla extract
Instructions
- In a mixing bowl, whisk together all the ingredients until smooth. Adjust sweetness to taste.
METHOD 1: BLENDER
- Fill the yogurt mixture into ice cube trays and freeze for 3-4 hours until set.
- Empty the cubes into a high-speed blender and blend until smooth. Use a tamper to push the cubes into the blade during blending. Stop to scrape down the sides with a spatula if necessary.
METHOD 2: ICE CREAM MAKER
- Freeze ice cream canister overnight.
- Add the yogurt mixture to the ice cream maker and churn as per the manufacturer's instructions. This takes around 20 minutes.
TO SERVE
- Enjoy as soft serve straight away or for scoop-able frozen yogurt, transfer to a freezable container and freeze for a further 2 hours until set.
Notes
- The recipe yields about 8 scoops, with each serving being 1 to 2 scoops.
- Allulose, powdered xylitol, Bocha Sweet, honey, or maple syrup can be used as sweeteners, but quantity adjustments may be necessary.
- For those without a blender or ice cream maker, freeze the mixture in a shallow container and stir every 30 minutes for about 3 hours to break ice crystals and improve texture.
- The frozen yogurt can be stored in the freezer for up to 2 months; thaw for about 20 minutes before serving.
