Description
Easy Taco Soup starts with sautéing garlic and onion, then browning lean ground beef to build a flavorful base. Canned black beans, corn, green chili, and crushed tomatoes provide body and texture, while homemade taco seasoning blends spices like cumin, paprika, oregano, and cayenne for balanced heat and warmth.
After combining all soup ingredients and bringing to a simmer, the flavors meld over about ten minutes, making for a rich broth filled with tender vegetables and meat. Serving with toppings such as shredded cheese, sour cream, fresh cilantro, and corn chips adds layers of texture and creaminess that complement the mildly smoky and spicy broth.
This soup works well as a standalone meal, especially when topped generously. Adjusting the thickness by adding water lets you tailor it to preference, and substitutions like other beans or omitting green chilies are easy to accommodate. The recipe yields about five servings, making it suitable for families or meal prep.
Ingredients
Homemade Taco Seasoning (Note 1)
- 1 tsp garlic powder each
- 1 tsp onion powder
- 1 tsp cayenne pepper
- 2 tsp dried oregano each
- 2 tsp paprika each
- 2 1/2 tsp cumin powder
- 3/4 tsp salt
- 1/2 tsp black pepper
Soup
- 1 tbsp olive oil
- 2 garlic minced, cloves
- 1 onion , finely chopped (brown or yellow)
- 500 g / 1 lb ground beef (mince), lean
- 400 g/ 14 oz black beans drained and rinsed (Note 2, 1 can
- 400g / 14oz corn kernels drained and rinsed, 1 can
- 120 g / 4.5 oz green chili Note 3, canned
- 800 g / 28 oz crushed tomato canned
- 2 cups beef broth
Toppings (Don't skip these!)
- cheese essential!, shredded
- sour cream or yoghurt (essential!)
- Coriander finely sliced, or cilantro leaves or shallots or scallions, fresh
- corn chips
- avocado diced, or squeeze of lime juice
Instructions
- Heat oil in a pot over medium high heat. Add garlic and onion, cook until softened (3 min).
- Add beef and turn up the heat to high. Cook, breaking it up as you go, until it all changes from pink to brown.
- Add remaining Soup ingredients and Taco Seasoning. Bring to a simmer then turn heat down to medium.
- Simmer for 10 minutes to bring the flavours together. Adjust thickness with water if desired.
- This is how I like to serve it: place a handful of corn chips in the bowl. Ladle in soup. Top with sour cream, cheese, coriander and a few crushed corn chips. For a healthier option, skip the corn chips in the bowl and/or serve more on the top / side of the soup.
Notes
- Store-bought taco seasoning packets can replace the homemade blend if preferred.
- Black beans can be substituted with other beans to vary texture and flavor.
- If canned green chillies are unavailable, omit them; they mainly add chili flavor without much heat.
