Easy Teriyaki Noodles
Description
In this recipe, linguine is cooked according to package instructions until al dente. Meanwhile, the teriyaki sauce is mixed by combining minced garlic, grated fresh ginger, soy sauce, a sweetener such as maple or agave syrup, and rice vinegar. The sauce ingredients are balanced for sweetness and saltiness and can be adjusted to taste.
Carrots are cut into thin matchsticks and cooked along with chopped green beans until they soften slightly, providing firmness and a fresh vegetable component. Pinto beans are an optional addition for more substance. After draining, the linguine is returned to the pot, then the vegetables and half of the prepared sauce are added and briefly cooked to meld the flavors and reduce the raw garlic bite. Cilantro is stirred in just before serving for brightness.
This noodle dish is best prepared in a wok for even heating and the potential to create slightly crisped noodles. Cooking the noodles al dente is important to prevent mushiness, especially as they will continue to cook slightly when mixed with warm sauce and vegetables. The balance of soy, sweetener, and vinegar in the sauce ensures a flavorful coating without overpowering the other ingredients.
Ingredients
- 8 ounces linguine
- 4 garlic minced, cloves
- 1 tablespoon ginger fresh grated
- ½ cup soy sauce
- 3 tablespoons sweetener I used a mayple syrup agave blend) OR brown sugar
- 2 teaspoons rice vinegar
- 2 medium carrot
- ½ cup green beans chopped or verts
- ½ cup cilantro chopped
- pinto beans Optional - add beans to make it more filling, I like
Instructions
- Cook linguine according to the package
- While that cooks prepare the sauce by combining the garlic, ginger, soy sauce, sweetener, and rice vinegar in a small bowl and mix.
- Chop carrots into small matchsticks and cook with green beans until they soften a little bit (Add beans here if using)
- When the pasta is done, drain it and put it back in the pot. Add in veggies and HALF the sauce. If you're not going to eat it right away you'll need the extra sauce because it absorbs into the noodles. So save the other half for when you're ready to eat it. Cook it just a bit to take some of the bites out of the raw garlic. Toss in cilantro once removed from heat.
Notes
- Use a wok if possible to achieve even heating and slightly crispy noodles.
- Taste the sauce mixture before combining, adjusting sweetener or soy sauce to balance sweetness and saltiness to your preference.
- Cook noodles until al dente, as they will soften more when mixed with sauce and vegetables.
