A quick and easy vegan egg, sausage, and cheese breakfast sandwich that's perfect for a weekday or weekend breakfast.

Ingredients
- 1 vegan breakfast sausage patty Link to recipe in the instructions.
- 6 tablespoon vegan egg we recommend JUST egg or Follow Your Heart (SEE NOTE)
- 1 slice of vegan cheese you can also use shredded vegan cheese
- 1 English Muffin sliced in half and toasted
- optional toppings
- hot sauce
- mashed avocado
- salsa
- Sliced tomato and greens
- hash browns
- Tofu bacon SEE NOTE

Instructions
- Make our sausage patties (click here for recipe)or buy ready-made vegan patties.
- We recommend making a batch or two of our breakfast patties and keep them in your freezer. Reheat and build your sandwich.
- Pour 6 tablespoon of JUST egg in a hot (medium-high) non-stick pan and use a spatula to push the edges of the egg toward the center so it forms the shape of a circle. Cook until it’s firm all of the way through. Approximately 4 minutes.
- Place a slice of your favorite vegan cheese on top of the egg or sprinkle your favorite shredded vegan cheese evenly over the top. Cover the pan and let it melt. Approximately 1 minute.
- Toast an English muffin while you cook the vegan egg.
- Place the sausage patty on the bottom piece of the English muffin, then put the egg and cheese on the sausage, top with your favorite hot sauce.

- If you use Follow Your Heart Vegan Egg, follow the instructions for 2 eggs. If you don’t want to use a vegan egg to make this, you can use tofu to substitute the egg.
