Easy Veggie Greek Pitas
Description
Easy Veggie Greek Pitas feature fresh vegetable slices layered inside pita bread along with a homemade tzatziki sauce. The sauce is made by mixing Greek full-fat yogurt with garlic, fresh lemon juice, and a blend of dried oregano, dill, parsley, onion powder, and salt, creating a cooling and fragrant spread. The vegetables—sliced tomato, cucumber, and thin red onion—add crunch and freshness. The sandwich assembly involves warming pita bread slightly, then layering in the veggies and tzatziki, finishing with a sprinkle of dried oregano and optional crumbled feta cheese for added richness.
The combination offers a satisfying balance of creamy, crisp, and tangy elements. The method is straightforward, focusing on fresh ingredients with minimal cooking. The optional caramelizing of onions from an earlier version introduces a sweeter depth but is now replaced by raw onion for brightness. These pitas can be made ahead with stored tzatziki sauce and vegetables kept refrigerated, making this a convenient and refreshing meal option.
Serving these pitas with a garnish of fresh parsley or alongside French fries, as commonly enjoyed in Greek street food stalls, brings additional texture and flavor. The recipe notes that the raw onions can easily be sautéed or caramelized if preferred, allowing some flexibility depending on taste.
Ingredients
Tzatziki Sauce
- 1/2 /2 cup Greek yogurt full-fat, plain
- 1-2 garlic minced, cloves
- 3 Tablespoons lemon juice 1 lemon, fresh
- 1/2 /2 teaspoon oregano dried
- 1/4 /4 teaspoon dill dried
- 1/4 /4 teaspoon parsley dried
- 1/4 /4 teaspoon onion powder
- 1/4 /4 teaspoon salt or more to taste
Veggie Pita
- 1 tomato sliced, large
- 1 cucumber thinly sliced, small or 1/2 large
- 1/2 /2 red onion thinly sliced, small
- 2 pita bread large
- oregano for garnish, dried
- 1/4 /4 cup feta cheese optional, for garnish, crumbled
Instructions
- Tzatziki: In a small bowl, stir together the yogurt, garlic, lemon juice, oregano, dill, parsley, onion powder, and salt. Taste test for salt and herb levels then set aside.
- Optional, but recommended: warm pita in microwave for 15-25 seconds.
- Assemble each pita by layering cucumber slices, tomato slices, onion, and a spread of tzatziki sauce in each pita. Top with a generous pinch of dried oregano and feta cheese crumbles. Fresh parsley is also a great garnish.
- Store leftover tzatziki sauce in an airtight container in the fridge (as well as any leftover veggies). Easily add more pita and veggies to make more sandwiches.
Notes
- If preferred, lightly sauté or caramelize the red onion slices before assembling for a milder flavor.
- Leftover tzatziki sauce and sliced vegetables can be stored in airtight containers in the refrigerator for easy sandwich assembly later.
- Warming pita bread briefly in the microwave enhances pliability and eating experience.
- Adding fries to the meal reflects a typical Greek street food tradition and complements the pita nicely.
