Egg White Chocolate Soufflé {Low-Carb, GF, High-Protein, Low-Fat}
Description
The recipe blends whipped egg whites with almond milk, vanilla extract, chocolate protein powder, and stevia to create a mousse-like soufflé that is both light and protein-rich. Cooking in a microwavable ramekin lets the mixture set into a soft, spongy texture within minutes, preserving the delicate structure of the egg whites.
Because it contains no flour or added fat, this soufflé emphasizes protein and controlled sweetness, fitting low-fat or low-carb meal plans. The chocolate protein powder adds flavor depth and richness without compromising the soufflé's airy quality.
Serving it freshly microwaved ensures the best texture, and it can be eaten as a dessert or a protein snack.
Ingredients
- 4 egg 1/2 cup, large, whites
- 1/4 cup almond milk unsweetened vanilla
- 1/2 teaspoon vanilla extract
- 2 tablespoons chocolate protein powder
- 1/2 teaspoon stevia or sweetener of choice to taste
Instructions
- Spray a small, microwave-safe dish (like a ramekin) with cooking spray. Mine is 8 ounces.
- In a small bowl, whisk together all the ingredients until the protein powder is well mixed.
- Pour the mixture into the ramekin and microwave on high until all the liquid is absorbed, about 2-3 minutes. You may need to stop the cooking every 30 seconds or so, to let the egg whites deflate a little.
