Ingredients:

  • 1 pound ground beef lean
  • 1/2 cup onion +extra for garnish, chopped
  • 1/2 cup celery chopped
  • 4 cups beef broth
  • 1 can fire roasted tomatoes
  • 8 ounces cheddar cheese 1 8-oz package, shredded
  • 3 green onions chopped
  • tomato diced, fresh
  • 1 avocado peeled and quartered
  • 1 cilantro cleaned and chopped, bunch
  • salt to taste
  • black pepper to taste

Instructions

Directions:

  1. Prep a 6-quart crock pot with cooking spray.
  2. Add ground beef, onions, celery to a nonstick skillet.
  3. Cook on medium high heat constantly stirring until the ground beef is brown.
  4. Transfer the ground beef, onions, celery to a crockpot.
  5. Add beef broth and canned tomatoes to the crock pot.
  6. Stir well to mix.
  7. Cover the crockpot.
  8. Cook on high for 3-4 hours or on low for 6-8 hours.
  9. About 30 minutes before being served, add the cheese.
  10. Stir to mix the cheese into the soup.
