Equipment
- Potato masher
- Stand mixer
Instructions
- Peel the guavas and remove the central part with the seeds.
- Cut the pulp into pieces.
- Place the pieces of guava pulp in a large bowl.
- Add the sugar and mash together with a potato masher until smooth. The use of a blender is also possible.
- Transfer the sweetened guava puree to the bowl of a stand mixer and add the egg whites.
- Beat together for several minutes until a creamy and stiff consistency is obtained.
- Serve the mousse immediately in cups or ice cream cones.
- Garnish the top with arrope de mora (blackberry syrup), grajeas (small jelly balls or vermicelli of all colors) and shredded coconut.
