  • 1 cup white sugar
  • 1 cup butter room temperature, unsalted
  • 2 cup dry milk
  • 1 1/2 cup coconut flakes shredded into tiny pieces, unsweetened
  • 1 cup vanilla wafers
  • 1 tsp almond extract cut in half
  • 1/2 cup almond roasted
  • 1/2 cup coconut flakes for coating, shredded into tiny pieces, unsweetened
  • 2 oz cream cheese add only if the texture is crumbly

Instructions

  1. Combine sugar together with butter until the texture is creamy.
  2. Mix dry milk into the butter.
  3. Crush wafers. The easiest, most mess-free way to do this is by placing cookies in a bag and crushing them with a rolling pin or a meat tenderizer. Add wafers, almond extract and tiny pieces of coconut flakes into the mixture and mix until you get a paste-like texture.
  4. Using an ice cream scoop, place 1/2 of the almond inside and make a small round piece. 
  5.  Roll each candy into coconut flakes. Repeat for each piece.
