Description
Prepping by marinating chicken drumsticks in soy sauce, vinegar, garlic, pepper, and optional jalapeño infuses deep flavors. Cooking the chicken with bay leaves and water over medium-low heat slowly tenderizes the meat while the marinade transforms into a rich sauce. Removing the lid toward the end concentrates flavors by reducing the sauce.
The resulting dish presents tender, succulent chicken with a balanced sauce that's both tart and savory. Typically served over rice, it makes a hearty meal featuring traditional Filipino seasonings and a gentle heat from the optional jalapeño.
Ingredients
- 8 chicken drumstick on the bone, skin removed
- 1/3 cup soy sauce use gluten-free soy sauce for GF and coconut aminos for Paleo, low sodium
- 1/3 cup apple cider vinegar
- 1 garlic crushed, small head
- 6 ground black pepper
- 4 bay leaf
- 1 jalapeño (chopped (optional))
Instructions
- Marinate chicken in vinegar, soy sauce, garlic, jalapeño and pepper, for at least an hour (overnight is ideal).
- Put chicken, 1/2 cup water, bay leaves and marinade into a deep nonstick skillet and cook on medium-low heat. Cover and cook until the meat is tender, about 45 minutes.
- Remove the cover and cook an additional 15 minutes, until the sauce reduces.
- Discard bay leaves and serve over rice if you wish.
