Firecracker Meatballs Recipe
Description
This recipe combines equal parts ground beef and pork bound with almond flour and flavored with fresh garlic, ginger, soy sauce, and sriracha to create juicy meatballs with a subtle kick. Baking them at a high temperature ensures a golden exterior while retaining moisture inside. The firecracker sauce combines mayonnaise, sour cream, honey, sriracha, and rice vinegar, offering creamy sweetness with spicy and tangy notes. Drizzling this over the warm meatballs and topping with sliced green onions and sesame seeds provides contrasting crunch and freshness. For appetizers, smaller meatballs served with dipping sauce work well, while larger ones serve as a satisfying main dish alongside steamed rice and vegetables.
Adjusting the sriracha in the meatballs or sauce lets you control the heat level to suit preferences. Using a cookie scoop helps form uniform-sized meatballs for even baking. The combination of pork and beef delivers a balanced flavor and moist texture.
Ingredients
Meatballs
- 1 lb ground beef
- 1 lb ground pork
- ½ cup almond flour
- 2 tablespoons sriracha
- 2 tablespoons soy sauce gluten-free if needed
- 2 tablespoons ginger grated
- 4 cloves garlic minced
- 4 green onions chopped (whites for the meatballs and greens to serve)
- sesame seeds to serve
Firecracker Sauce
- 2 tablespoons mayonnaise can be light
- 2 tablespoons sour cream can be light
- 2 tablespoons honey liquid
- 1 tablespoon sriracha more to taste
- 1 teaspoon rice vinegar can sub apple cider vinegar
Instructions
- Preheat your oven to 425 degrees Fahrenheit. Mix all the meatball ingredients in a large bowl. Form into 1 ½ inch meatballs - a medium-sized cookie scoop works great for this! Place the meatballs on a baking sheet and bake for 15-20 minutes, or until golden and cooked through.
- While the meatballs are in the oven, mix the firecracker sauce in a medium-sized bowl then set it aside.
- When the meatballs are fully cooked, remove them from the oven, plate them, then drizzle them with the firecracker sauce and sprinkle the green onions and some sesame seeds over the top.
Notes
- Form smaller ¾-inch meatballs for appetizer servings to allow easy picking up with toothpicks.
- Bake at 425°F for 15-20 minutes until golden and cooked through for juicy results.
- Adjust sriracha amount to control spiciness in both meatballs and sauce separately as preferred.
- Serve firecracker meatballs with roasted broccoli and basmati rice for a complete meal.
- Use a medium or small cookie scoop to make evenly sized meatballs for consistent cooking.
