Flognarde: Berry Clafoutis
Description
Flognarde: Berry Clafoutis is a traditional French-style baked custard with fresh berries nestled under a smooth batter. The base batter, made with eggs, milk, cream, flour, sugar, and vanilla, creates a delicate and tender structure that contrasts with the juicy burst of berries. The butter at the bottom of the pan caramelizes slightly during baking, imparting a rich flavor that compliments the fruit. Baking at a high temperature allows for a golden surface while keeping the interior soft and custardy. Cooling briefly before slicing helps the dessert hold its shape when served.
The mix of berries can be customized depending on freshness or preference, with larger berries cut into bite-size pieces for uniform baking. This dish can be served as a casual dessert or light breakfast treat. Storing leftovers in the refrigerator keeps it fresh for several days, making it convenient to prepare ahead.
Though the recipe uses regular wheat flour, a gluten-free alternative may work as well, with some reader reports suggesting suitable substitutions. Care should be taken to use whole or 2% milk rather than skim to maintain the proper batter texture and richness.
Ingredients
- 1 tablespoon butter
- 2 cups berries
- ¼ cup heavy whipping cream
- 1 cup milk 2% or whole, not skim
- ⅔ cup flour
- 3 egg
- ¼ cup sugar
- 2 teaspoons vanilla extract
- ¼ teaspoon salt
- Berry more fresh berries, optional, for serving
- powdered sugar more fresh berries, optional, for serving
Instructions
- Preheat oven 400ºF.
- Add butter to the bottom of a deep dish pie pan (or 8"x8" baking dish). Place in oven while it's preheating.
- Dice any large berries into bite-size pieces.
- In a large mixing bowl, add all remaining ingredients except the fruit. Whisk well.
- Remove pie pan from the oven, and add fruit to the pan. Pour batter over fruit.
- Bake 35-40 minutes until flognarde is golden and a knife inserted in the center comes out clean.
- Allow to cool 5-10 minutes. Note: If you skip the cooling time, the flognarde won't hold its shape when cut.
- Dust flognarde with powdered sugar (optional), and serve with fresh berries if desired.
- Store leftover cobbler in the fridge for up to 4-5 days.
Notes
- Cool the flognarde for 5 to 10 minutes before cutting to ensure it holds its shape.
- Leftover flognarde can be stored covered in the refrigerator for up to 4 to 5 days.
- Gluten-free flour substitutions may work; some readers suggest Bob’s Red Mill 1-to-1 gluten-free flour with baking powder as a tested option.
